| A few of us have been discussing easy recipes using tuna, etc. and I thought it would be fun to start a thread for EASY RECIPES...something you can put together with just a few ingredients. No recipes that call for 8 different kinds of spices or some exotic food nobody has heard about. Lets keep it simple, easy and quick. Maybe some recipes for summer, when its hot outside..and some recipes for using out on the grill, also!!!!! LETS GIVE IT A TRY!!!!!!!!!!!!!!!

| This is for out on the grill.. I call this...drumroll please.....Potatoes on the Grill tada you need.. a large baking potato per person..peeled or not..however you like them- cubed small salt/pepper/garlic powder to taste cut up onion..diced or sliced.. green, red and yellow bell pepper sliced or diced non-stick cooking spray butter or margarine sour cream heavy duty aluminum foil for each person tear off the aluminum foil about a 12x12 sq.. spray the non shiny side with the non-stick spray arrange the potato and equal amounts of the other ingredients in the middle sprinkle with salt/pepper/garlic powder drop a dollop of butter in the middle fold over the aluminum foil to make an airtight little package..(the best you can) put it on a hot grill for about 20 minutes or so..turn once being careful not to puncture the foil for about another 5 or 10 minutes.. carefully open them up..(very steamy) garnish with a blob of sour cream yum

| Yummmmmmmmmm......................I'm going to like this thread. Here's one - this can be a side dish. On the grill Slice up a green pepper, red pepper, yellow pepper, large onion into strips. Quarter some tomatoes Slice up a zucchini or two if they are small Put them all in a aluminum foil bag or make one out of plain aluminum foil Pour a bottle of your favorite italian dressing over all of it Grill for 30 - 60 minutes on grill depending on how well done you like your veggies and turn bag a few times during grilling.

| Quick Skillet lunch put a tortilla in a hot dry skillet..cover it - not all the way to the edge - with finely shredded mexican cheese.. add some COOKED cubed chicken (great if you have some leftover from dinner the night before) place another tortilla on top.. smash it down.. and cover with a lid for about 30 seconds or until the cheese melts..you don't want to burn the tortilla..uncover and turn it over to slightly brown the other side... don't cook it so long that the cheese starts oozing out the sides.. just until the tortilla is browned..take it out.. slice into pizza wedges.. and serve with guacamole, salsa and sour cream..and some chives if you like..and a margarita! I make this sometimes for breakfast..using scrambled eggs instead of chicken and coffee instead of a margarita!

| Got this recipe back in 1970 during my first marriage, (hey, I was 8, okay) Impossible Cheeseburger Pie 1 pound of ground chuck 1 and 1/2 cups chopped onion 1/2 tsp salt 1/4 tsp pepper 1 and 1/2 cups milk 3/4 cups Bisquick Mix 3 eggs 2 tomatoes (I use a regular size drained canned tomatoes) 1 cup shredded cheddar cheese, or any kind you like Heat oven to 375* Grease 10 inch pie plate. Brown beef and onion, drain. Stir in salt, pepper and spread in pie plate. Beat milk, baking mix and eggs until smooth using blender or a mixer, (I use a fork, I'm lazy) Pour into plate. Bake 25 minutes, then top with tomatoes and cheese, bake another 10 minutes or so. Cool about 5 minutes. Makes 6 to 8 minutes. I almost always have the ingredients on hand and it smell wonderful as it's cooking. Add a salad and supper is ready. |

| We usually fix this in the oven, but it works on the grill also. Take baking potatoes, however many you want to cook. Wash them well, dry with paper towels. Cut aluminum in squares big enough to wrap twice around each potato. Center the spuds in the center of the foil, spray with butter or olive oil flavored Pam; make sure the potato is covered, sprinkle with onion powder, garlic powder, seasoned salt, or anything else that suits your fancy. Wrap the foil tightly around the potato, and grill until done. The time depends on your grill/oven (oven temp around 450* for a little over an hour) My family isn't wild about eating potato skins, but they will eat them this way. |

| Okay, while the subject is cooking easy recipes, how do I grill a sirloin steak that is medium rare? I haven't been able to master this yet, Help! |

| Joy I am going to ask Gary when he gets home..about your question..he is very good at grilling steaks..and he likes them medium rare. All of the above recipes sound just yummy, i have been busy copying and pasting them.. Heres one for chicken breasts.. Roll Chicken Breasts in Ranch dressing, then in seasoned bread crumbs, put in pan and bake/roast for about 1 hour at 375 (depends on how big and thick they are of course)...then right before they are done, sprinkle some shredded cheese on top and let it melt..(any cheese is fine, i use both cheddar or mozzarella)..This is really really good and so simple.

| Yummy recipe Joy...all these recipes are mouth watering... As far as cooking the steak medium...Gary just said you really have to watch it constantly...try to cook it on one side, cut a small piece to look inside..and then flip it over...he likes his steak medium so he hovers over it like a mother over a baby..LOL...i like mine well done so he just ignores it until it starts smokin'...hahahhahah
